You will get a notification when restarting PT3 when there is a new version; the reason for the extended expiration date on Build 2 is that we believed Build 3 would be done by now. Unfortunately, it is not, so we've had to extend the Build 2 expiration date.
The HUD problems were much deeper rooted than originally anticipated. There will be another Beta released either tonight or tomorrow that should have fixed nearly all of the issues that remain outstanding. Hopefully Build 3 should follow not too long thereafter.

On the other hand, if the stat was calculated the same way as PFR it would be much more useful for assigning ranges overall. Is there some way to get a stat on the HUD that is calculated this way?
If you want to have a stat showing 3-bets over total hands, click Configure --> Stats, click on "Holdem Cash Player Statistics" then go to the Stats tab. Click on 3bet Preflop, then click the 'dup' button. This creates a duplicate of the 3-bet stat. Rename it something slightly different, then in the value expression change cnt_p_3bet_opp to cnt_hands, save, and then use that stat in your layout instead.
The PT3 custom statistics interface is very powerful
