This is not a water club issue but rather an issue when you use a debt card instead of a credit card.
I travel for business often. I usually use a credit card. However, sometimes I have to use my debt card (when I max out my credit card). Whenever I use a debt card, the hotel puts a "hold" on the amount of the security deposit. The money is in "limbo" for usually 3-5 days or longer. The security deposit doesn't go to the hotel, it is just on hold. Because of this, you can't access the funds either. I've also had this happen when I rent cars with a debt card.
The other downside to using a debt card vs. credit card is if the hotel does charge you for some bogus item (like the broken TV mention), you have little recourse but to deal with the hotel. The card company will not help at all. With a credit card you can put it in dispute.
The same is true if someone rips off your card number and runs up charges. It is not limited to $50. It is limited to whatever you have in your account at the time.
Unless you can afford to "float" the security deposit and are OK with the risk of someone ripping off your card number, use credit card whenever possible.
The charges for dinner and spa are a seperate matter.
