The best way I've seen it done requires uniform chips. The pot is kept in neat stacks in the middle, and not in a jumble. Whenever anyone bets "pot", they are able to quickly match stacks with the middle. Super easy.
Last PLO game I played was 5/10 at the Borg, and the dealer cost me $1000 by undercounting the pot, which was a big mess of black, green, and red chips. Long story short, my opponent's pot sized reraise was smaller on the flop, leaving us more behind, and therefore my opponent was able to find a fold where he'd otherwise have been priced in . . . .
Getting back to the point, live PLO works easiest if your chip denominations are uniform and at least the size of the BB. Just my $0.02.
