I think it's a lot easier to just say that that M was neglected as a child and Code was abused as a child, they are absolutely a terrible match together and that they are codependent because the other person makes them feel "normal"(neglect from Code and abuse from M)because of their life conditioning and refusal to take steps to help themselves.

Let's step up your egg game. What's your favorite way to order eggs when you go out to eat? What kind of equipment do you have - gas or electric stove? Non-stick skillet? Cooking spray or butter? Is the setup different at Code's?

I'll give you my answers: Over medium. Electric stove, basic non-stick skillet, butter. I know from experience that I can get highly satisfactory eggs almost every time in 8 minutes, the time it takes to finish the cook on hash browns. Turn on burner to one tick cooler than medium. Once small pat of butter is melted swirl it around in the pan, I don't use much so it may not get the whole surface. Crack eggs into pan. Leave them alone. Pull them off when the whites are just set, maybe let them sit a minute, serve.

But that's me. Let's talk about you. How do you like your eggs?
No stick pan with cooking spray, heat turned up to high, 1-2 min cook time.
I prefer eggs scrambled with cheese.

This is how I do my eggs, except I use olive oil. Seems like that was unnecessary criticism by him considering it can be pretty easy to burn eggs, especially if they stick.

His criticism was absolutely warranted and his technique spot on.
If you use decent technique its almost impossible to burn eggs easy to overcook though. Take them of the heat when they are slightly undercooked the few moments it takes to get the eggs on the plate and the plate to the table will be enough to fully cook them.

Gus,

I'm with booker and don, no reason to ever burn eggs, no matter how you like them. And no reason to ever cook them on high.

Eggs today:

3-5 minutes total prep and cook time.

El D, your eggs always look too moist.

My eggs today, cooked on low heat instead of high. I messed up on the flip.

Also made the banana pancakes that Kristy suggested.

MLY your eggs are really starting to piss me off.

P,

Take eggs and butter out of fridge. 15s elapsed.
Small pat of butter and crack eggs into saucepan. 30s elapsed.
Turn heat to medium, mix eggs.
Cut up tomato and avocado. 1.5m elapsed.
Eggs starting to thicken, stir and cook a little more for a minute or so then take off heat. Prob 3-4m elapsed.
Toss tomato, avocado and salt/pepper into pan, mix. Less than 5 min elapsed.

Done.

this. Part of learning not to be a fat ass and part of learning to cook for yourself is dealing with some mediocre food from time to time.

It's scrambled eggs with some chopped tomato and avocado.. 5 mins seems normal.I make 4 eggs, jalapeno, onion, and chourico regularly. Takes no time at all and that would take longer since you want to actually cook down the mixed ingredients. That looks like fresh tomato and avocado.

mlylt,

not into peppering your eggs while they're cooking. I also don't do it in the scramble mix. Same goes for salt but I'm in the salt + eggs = sacrilege camp.

M,

Just follow my directions and then at the very end when they look like my scrambled eggs, turn the heat up to medium high and cook for a minute or so to dry them out more.

Fair enough. Flame stove? Refrigerated eggs => cooked on electric takes well beyond 4 mins

M,

Mmmmmmm runny yolks!!!!!

I've got a good system for eggs where I just preheat the pan on high while I scramble, add to skillet and stir like crazy until barely starting to form curds, then just remove from heat and the residual heat cooks the eggs. If you want them done further you can just put the pan back on the heat for a couple seconds.

Lunch:

Roasted, Skinless chicken w/bbq sauce
Carrots
Chicken+cheese taquitos
All natural strawberry popcycle

Mullen,

Do you mix the eggs in a bowl first? If not, I find your system leads to too much cooked white portion in the scramble. I really like skipping a step and mixing the eggs right in the pan.

It's def a solid technique, but you just need to watch it a little closer. Fine if you're just scrambling eggs. That technique on medium/medium high and you can stir, let them sit there a bit and thicken while you do other stuff for a couple mins, then stir a little more and you have more wiggle room on when to take them off heat.

I use your technique when doing Chinese style dishes with egg like fried rice or BBQ pork and eggs - I want the egg a little drier there and sort of between scrambled and fried.

This is how I still do my eggs:

https://smittenkitchen.com/2014/10/the-crispy-egg/

It's how I learned to fry my eggs almost 30 years ago from my grandmother in Taiwan and I think this is what a lot of Asians think of as fried egg.
05-07-2017 , 05:22 PM
That's a great technique too.like in the country style omelette or French style therevis no correct answer. I personally prefer my eggs done with butter and no colour at all. The second batches of eggs diablo posted look perfect to me, the scrambled looks slightly overdone but its hard to tell.

Mmmmmmm runny yolks!!!!!

is runny yolks news to people?

We all just scramble out of convenience. runny yolks are the single best food item on earth.
05-07-2017 , 07:36 PM
Runny yolks are delicious. Under cooked scrambled eggs (I'm looking at you, El D) are awful.

This is the first I've heard of Camp Salt + Eggs = Sacrilege. Are you using salted butter in your preparation?
05-07-2017 , 07:44 PM
Sure. Sometimes. I don't use a ton of butter when cooking eggs.

But if I serve you fried eggs and you reach for the salt shaker ima take it as disrespect.
