I blame griz for setting that in motion, lol.

Speaking of though, corn > flour when kcals matter. These are the kind of things that after a year of trying to eat better, someone should know.

So i went and played basketball for the first time in a very long time and I did some running.
Seeing my fat belly hanging out has given me some new motivation.
Running is a big deal to me. I could barely walk that distance without getting out of breath and my legs hurting a year ago.

I like them scrambled, but that requires me to stand over the stove and scramble them, while I can leave fried eggs alone while I go pull my hair up and finish getting ready.

I scramble my eggs just like El D in the pan with a whisk. You put the butter or spray in, let the pan get hot, crack the eggs, let em turn slightly white and then start whisking untill fully cooked.

Cooking is not a strong point for me, but aren't you supposed to scramble the eggs in a bowl, then pour the mixture into the (buttered) hot pan?

Scrambling in the pan seems more laborious (and less effective), and dirtying a bowl is probably not a big deal since it can just be rinsed and returned to the cabinet in < 10 sec.

That certainly explains their atrocious appearance. But if you enjoy eating them like that, more power to you.

Scrambling in a bowl is fine, but unnecessary.



Just mix them up in the pan while the butter is starting to melt. You don't want the pan hot to start if you're mixing the eggs in the pan because you don't want the whites to start cooking before the eggs are mixed up. The creamier you want it, the more stirring and lower heat. I prefer mine about half way between Gordon's creamy eggs and dry old school diner scrambled eggs. So I just put the heat on medium, mix up the eggs, mix some more as the butter melts and curds start to form, then mix a little more as they get close to how I like them. Take them off the heat before they get to that stage and mix up a final bit as they finish cooking with residual heat in pan.

The two big advantages of this technique are 1) you skip a step and have one less bowl to clean and 2) the butter incorporates into the egg evenly as it melts, leading to a more consistent and richer flavor and texture throughout.

**** ton of butter though. I'd imagine any egg mixture that is >30% butter is going to taste awesome regardless of how it's prepared.
