2nd pork shoulder attempt, slightly better than the first but probably still needs more time. Works for the kiwi palette that isnt as used to the smokiness, but I'd prefer it smokier.

Your setup looks really weird. Why is your wood on the drip pan and not black? It looks like you're getting basically no smoke, and have no bark. (There is uncarmelized sugar on top.) It should be black all around and easily able to fork tear. No idea how big that is, but I'd say anywhere from 10-14 hours seems reasonable. (Overcooking is far less of a worry than undercooking since you need to get it upto ~190-195 and that will take damn near forever at ~225-250 in your smoker)

Also, wtf with a thumbsup from Soulbro? Like... he tried and that is great. It is awful, and with some minor tweaks it can be way way better.

If it's any consolation things probably went sideways for most of us generations ago when we didn't get those ELITE lifting genes

Thanks for the offer, I would love an OESK, but it's illegal to ship it to MI and I don't travel to Chi-town (or any part of IL) or I would have been to a Binny's by now.

Age statement was moved to the back label to bring the label more in line with the Barrel Proofer. Bourbon snobs figure that is the first step to getting rid of the age statement completely.

Go out of your way to get over to Chicago and to Longman and Eagle while you're here. I first had that rye there and it's a great whiskey bar. I *try* to get a taste of something before I buy a bottle of it.

Ah didn't look at the back of the EC, I've just always had it as a standby and when I posted the photo here and went to write EC12 I was like... uhh... k.

haha, I have been wanting to go to Binny's since I got into bourbon but Chi and IL in general can suck it. I was in Hammond this summer and made a point not to cross that line because if I do, and get out of my car, the gun(s) has to stay in the car which means I am unarmed and someone can break in and steal my gats.

I was at a good bourbon bar in Ann Arbor once. Raven? The Raven? The Baltimore Ravens? Something like that. I drank a lot, I think I bought all the drinks for everyone I was there with and everyone was drunk for a long time. The end.

The bourbon/whiskey bar with the best selection in the state is a few miles from my house. It is a pretty small hole in the wall type place and their bar is just over-flowing with bottles of premium bourbons.
