Started over, at first got "appointments available" message again, so it's not that they filled up while I was going through their forms.
FU Walgreen's.
Once you get to the screen where you've answered the questions and if it now says there are no appointments, leave that tab open and search from there in the future. You won't need to go through the questions again. You will get logged out and I can't remember offhand if it's better to log in through another tab or not.
As for the Walgreens site being the worst, Rite Aid only lets you search by pharmacy. So you put in a zip and then have to check the 10 pharmacies separately. Although they did seem to hold my appointment while I filled out the information, which is a lot better than Walgreens who let you select a day/time while not holding it so you may get beat out during the process. Rite Aid also opened up appointments at midnight, which is fine if you know about that, but I feel bad for people who check the site throughout the day when there only chance is for a cancelled appointment to show up.
FYI, I got my parents appointments through each of these sites, but it was ~1 month ago. The sites may have changed since then.
