About an hour. Each incoming dealer should pitch an ABSENT button to any stack that doesn't have a body behind it, and after a stack has two buttons it can be picked up. If you play one hand with a new dealer, so you don't get your first button until you've been gone about half an hour, you can in theory be gone about an hour and a half.

If you go on the dinner list, you pick up and give up your seat. When you come back, you get the next available seat. You can be gone an hour and a half on weekdays, two hours on weekends. This is coordinated with the floor. (The
Poker Guide says pick up and then go see the floor, but it makes more sense to me to check with the floor first.)

Yes, if you want to change tables, talk to the floor for your area. They may tell you you need to wait until they have someone to replace you. They won't look favorably upon just getting up and moving yourself.
