You're playing courses right by me. Los Caballeros is a fine course though I don't remember being blown away. If it's Wickenburg Ranch that's one of the nicest courses in this part of the valley... though I haven't played it myself. Wanted to play it this summer while rates were down but the schedule never worked out.
Verrado is outstanding. Founders is the older of the two and my preference by far. Victory is very very nice as well, and a lot easier as there's more room to miss off the tee. I played it this summer when it was 105 out. There's absolutely no shade on the Victory course so it was a pretty miserable round. I've played Founders about 10 times as it's one of the nicest, and best valued, courses in the West Valley. It would cost a lot more if it was over in Scottsdale. Both the Verrado courses, especially Founders, can be challenging if you're not accurate off the tee since being wide of the fairway and rough usually leads to lost balls in the desert.
You have a great list of courses for that area. Only thing that would make it better was playing Quintero. It's a little closer to where you're staying than Wickenburg Ranch and Los Caballeros and is probably the best public course in AZ. But I can't see you being disappointed in any of those tracks. Enjoy the trip.
