Yesterday I made an omelet with Boar's Head Honey Turkey and White American Cheese.

It was pretty good.

Scrambled eggs on top of sausage with breakfast potatoes. The potatoes may not look it, but they were very crispy. There's also a light version of hollandaise. The eggs and sausage were perfect, but the sauce needs work.

I hate to admit it, but we always just buy the powdered version of hollandaise where you just add milk and butter. Tastes fine, lol.

I should probably do the same. The hollandaise was almost perfect, but then plated everything and it was too thick. I tried to fix it, but it ended up too thin.

The eggs were on point, though.

We eat that too, you are not alone. Wife made it this AM so I poached the eggs. One with smoked salmon one with prosciutto.




Three minutes in a slow rolling boil with salt and white wine vinegar in the water.

do you do the 'swirl the water in a circle' bit before dropping the eggs? i honestly have only tried to poach an egg once or twice in the past. turned out fine but nothing like that.

Nope. Never heard of it tbh. Just crack the eggs into a shallow small bowl or ramekin and slowly slide into the water.

That's how I do it too. My sister tried to get me to do the vinegar/swirl method but it never caught on with me. I'm not worried about presentation though as long as it's tasty.

Yup, standard is half inside and half on top. Most cooks are half sober soooooo you get what you pay for sadly. Ihop before and after working there is the last place I would eat for breakfast lol. It's a ****ing blast to work there tho! Having 2 ex strippers as bosses really helped lol.

This is 100% personal preference, but I just get no joy from omelets. The brown, crusty outside shell just kills it for me.

I mean, I'll eat it, BUT I WON'T ENJOY IT.

The omelet guy at Borgata's breakfast buffet makes some great omelets.

People would be throwing their singles at this guy, saying they got their omelet made by a world champion chef.

Nah, he would say that's a country style omelette as opposed to French, and one is not better than the other, they are just different. Dude was the head R&D chef for Howard Johnson in addition to being the personal chef for de Gaulle, etc. Papa Jacques knows his greasy spoons as well as his lobster souffles.

a country omelette does not have a ‘brown crusty shell’ like 27 described. it has bigger curds because it’s not moved around as vigorously while cooking but that doesn’t mean it’s over cooked.
