Scotchy Scotch eggs. Took some soft boiled eggs and marinated ~ 80 hrs in beet juice, Ardbeg, and salt. Same idea as ramen eggs. Ground pork layer around the egg, breaded, and fried.
These were good, will play around with it some more. The ground pork layer is traditional but I don't think it's ideal. I've had better Scotch eggs with other things like ground venison. Thinking about a Wellingtonesque situation with some kinda cured meat and duxelles around the egg.
