I am too afraid of a rat infestation to raise my own. Got those at the farmer's market. I used to have an 'egg man' that would just drop eggs off on my porch and I would leave him an envelope of cash but he stopped coming by

I need an egg man. My office was somewhat rural and we had a few folks that would bring in eggs. Those days however are long gone.

You’re right I need to start going back to the farmers market. I get a decent egg from the grocery store that’s from a local farm, darkest yolk I’ve found there but not as great as the ones you have.

I'm all about cheap eggs. Not really sure I could tell the difference in generic vs farmer's market. Maybe I'll do a taste test when I decide I'm ok getting my groceries some way other than walmart pickup again.

I can ensure you if you get some good yard eggs that have a deep dark yolk like KJS you’ll definitely notice the difference and appreciate. You may not think it justifies the 2-3X pricing but I do. I’m a real life nit as my name implies but this is one of the few things in which I don’t go cheapo.

My HEB has a source that’s always stocked from a local farm in Santa Fe, TX. I’m sure you can get something similar in DFW HEBs or Central Markets.

it's perfectly fine if you choose to limit your gastronomical experience to whatever is on clearance at walmart, but some of us are willing to pay a few pence more to get something exponentially better when we can.

Don't forget braunschweiger! And speaking of, RG got me on a little braunschweiger kick. Bought some last week on top of the other slop I bought a few weeks before. And funnily enough, they remarketed my old Liverwurst to Braunschweiger, but the packaging is identical. So RG was right, braunschweiger sounds WAY better than Liverwurst.

I love eggs, I make eggs all the time. I make breakfast sandwiches regularly, as well as just eating over easy eggs, scrambled eggs, and making ramen eggs for my ramen.

Lately I've been branching out more with my eggs.

Here's an egg thing I made the other day with some leftovers:



and here is a tortilla de patatas I made like a week before that:



I'm gonna make my first strata soon, that's also an egg dish.

Hmm. I don't have an HEB close enough to me to do my shopping there, but I recently learned I live inside their delivery radius, which was pretty exciting. May have to give them a try.

Ugh, another sign I really AM an old. Excited about a grocery store. Sigh.

Softboiled eggs, usually about 6.5 minutes for me.

Make your tare beforehand. Basically make a dashi

Kombu soaked in water preferably at least over night. Bring water and kombu to boil, immediately remove kombu right before boil to remove bitterness and slimyness.

When liquid is boiling, turn off heat. Add katsuoboshi. Steep for no more than 5 minutes. Strain.

Add soy sauce and mirin.

Easy way is to skip the kombudashi and just bring to boil some soy, water, mirin. Turn off heat. Add katsuoboshi. Steep. Drain.

Let cool.

Soak peeled eggs in liquid for 2 days.

What do you do with leftover tare after your eggs are marinated?

You put it in to the bottom of your ramen bowl with either some lard or some shmalz and some scallions if you like. Then you top with hot chicken stock or pork stock. Then noodles. Then toppings.

Haha, thanks.

Basically dashi+soy+mirin in different ratios is the basis for a lot of Japanese dishes. On the thin side with a lot more dashi, you have soba and tempura dipping sauce. On the thicker, sweeter side, you have sukiyaki base or oyakodon sauce.

I looked and couldn’t find the eggs that I always buy when searching online for my store. So crap you may be limited on online availability.
