I am not a vegetarian but I would take fruit and veggies over meat if I had to choose.

Tofu tastes like nothing. Probably the most bland thing I've ever eaten.

Which is why you never just eat tofu. You marinade it, fry it, mix it up with something else, etc. It's like saying lettuce is the most bland thing I've ever eaten.

You might think so since 3 servings of fruit gives you an additional life, but I've never seen you pass up an opportunity to eat a turtle either. Going bulemic afterward doesn't change that, you panic-stricken freak!

Tofu can be frickin amazing and this is coming from a guy who makes his own cured meats. All in the technique.

I have found if you slice tofu paper thin and then sandwich a slice of tofu it between slabs of cured meats it is actually pretty delicious.

Especially if you remove the slice of tofu right before eating.

*I know this isn't what vegans do: But is it true you can actually survive on solely fruits, veggies, and nuts? How would you be able to get enough calories if you don't eat bread or cheese, etc?

Yep. Just eating nuts would be an easy way to get 2500kcal.

Anyone eat Gardein products? They're delicious. Tofurky isn't half bad either

Do you eat eggs?

I have some sweet recipes, but many have egg.

It is weird to me that vegetarians aren't more freaked out by the idea of an egg, than the flesh of animal.

Advice from anyone who's gone veg?
I had a brief vegan fling, and now the majority of my diet is vegetarian since I'm usually too lazy to cook meat and don't always feel like paying the big bucks for pasture-raised meat. Some possibly already-mentioned advice:

- You should probably get B12 somehow if you're not already. Nutritional yeast is one easy way, the stuff actually tastes good by itself (kinda like cheese puffs). Or you can drink some Eden soy milk (that's a good food brand in general that you can rest assured wouldn't have GMO soy).

- It's also harder to get enough saturated fat as a vegan, which is an important nutrient despite its vilification. As a vegan I got mine from coconut butter (e.g. Artisana tastes amazing), cacao beans and dark chocolate (like 85% cocoa or higher).

- If you're not getting enough direct sun exposure, you can get Vitamin D from mushrooms (though if you got plenty of sun during the summer, I think your body stores D for months after). That's about the only significant vegan source I know besides fortified things. Or I'm not sure if tofu has it, I never did the tofu thing.

Is anyone here 100% vegan for health rather than ethical reasons? If so, I'm curious to hear your take on the B12 issue (because theoretically a complete, optimal diet wouldn't require fortification / supplementation though I guess that's not necessarily true).

How long were you vegan?

A few months, shortly after becoming a health freak. Stopped when I was no longer convinced of the theory that animal protein is harmful.

Re recipes, there are some vegan recipe books by Colleen Patrick-Goudreau that look good, I never got around to trying them though.

so right now I'm in the "wow, there's nothing to eat stage"
Oh I loaded up on fruits, veggies, nuts, and cooked different rices & beans (mostly lentils since they don't require soaking, and other beans I bought canned). Rice & beans fills you up. Though I learned later that nuts and grains have phytates which impede mineral absorption, so too much of them is probably bad for that reason.

Btw what made you go vegan?
edit - nvm

My reasons were mainly ethical.
Question then. What about pasture-raised dairy?

The longer I am vegan the more radical I become. Right now I'm threatening my family not visit for thanksgiving unless we eat a vegan meal. Don't even talk to me about pasture raised bull****

I am going to shoot my thanksgiving turkeys this year. There are huge wild flocks around here.
