weird why is it that all of the actually great jeopardy champs also know a great deal about pop culture?
couldn't just be that these contestants weren't particularly bright and didn't have a very extensive base of knowledge?

Look guys, I've played trivia at the highest level with tons of top players for over 20 years now. Sure, the best of the best and some of the rest do know pop culture. I'm not saying everybody is totally ignorant about the topic. But by far, people that are good at trivia are typically academics who don't veer far from the classics. Therefore they don't know pop culture, they don't listen to much current radio, watch much current TV, etc.
You may not like this answer, it's the exact same reason why most contestants fail miserably on the sports categories. But take it from someone in the trivia trenches, it's the absolute truth.
