I drove 4 other places first, everything closed (lol sunday in the texas bible belt). I had many hours of down time between driving a team mate to his race and my own start, and I needed food in a big way, honey. The only other thing I found open was a Panda Express.

Actually the scheduling was kind of horrible. The guy I was sharing a room with had a race at 8:40, mine wasn't until 1pm. So I got up, dropped him off, and then roamed around looking for something to eat for an hour.

Actually this is probably a case of the olds but I was shocked at what a La Quinta in a small texas town wanted to charge for a room.

Mmmm duck sounds good.

My spatchcock was not perfect, I didnt flatten it out enough to get even cooking. Next time... I also want to play with a bit of hot smoke, think that would work well. I did a hot smoked salmon filet that came out pretty awesome.
