I’m renting my friend’s mother’s house while we gut and remodel an old farm house. The mom is in assisted living.

All the kitchen stuff we’re using is hers.

That cutting board is 12”x12” but feels like it weighs 20 lbs.

so i've been going gluten free and one of the things i was really amped for was the ability to eat bread again without getting migraines

thing is, as captain obvious would state, if they don't make it "gluten free" by default then it probably sucks ass

indeed gluten free bread is not fluffy but really heavy and doughy and if sliced thinly just crumbles apart so the focus is always on the bread that doesn't taste half as good as bread should taste

so been mixing it up with wraps lately, got some to make breakfast burritos and then tried some sandwiches and i gotta say it took a while getting used to but i'm coming around to it and with each one i get better so prep time has decreased from 5 hours to a mere 2 hours

regular bread sandwich>>gluten free wrap>>>>>>>>>>>>>>>>gluten free bread sandwich

I once knew a woman who had a gluten problem.

She was very nice and kind. I don't know why gluten was messing with her to begin with.

i'm very fortunate in that i have it very mildly, ie i lived with it for over 30 years without knowing anything was specifically wrong, i can periodically "cheat" and eat something but do it knowing i'll have some consequences the next day - when traveling/visiting people i usually just eat whatever to make it easier on the host/rest of group but pack accordingly and bring a lot of tylenol and pepto bismol

it can get bad enough that patients needed to stay at medical facilities before they knew the cause - which they only know because in wwii when holland didn't have any wheat the people at celiac clinics all recovered to normal and then once the war ended and wheat came back they all regressed and that's actually how they know gluten is the trigger

what happens if i eat it

migraines
incredibly tired, always feel spent
painful blisters
lots of gas
frequent toilet visits
extended gut (even when i was a college athlete and in peak shape my stomache was never really cooperating with the rest of my physique - not like a big gut or anything but surprisingly extended compared to the rest)


i never knew because wheat is in everything and a lot of those things you can just normalize, in college i was actually diagnosed with chronic fatigue syndrome and looking back on it that was the semester i was pretty much living off ramne

going to italy was what really set it off, went from an occasional thing i confused for cysts to full blown paranoia i had bed bugs because my ankles were covered in little blisters like this (not me, my legs are much sexier, finished 2nd place in a leg off once)


looking back on it now i've known people who had arms and legs like that which i just thought was acne but now i recognize it's a symptom of celiac disease (if you know people like that tell them to google celiac blisters and you'll change their lives)

but i thought it was from bed bugs, then while in staying on the red sea all we had was a kitchenette and the only shop for like 50 miles was limited so was basically eating a ton of bread of pasta every day and was constantly in the bathroom, always felt tired and had daily migraines but then those blisters showed up and they were all over my body - it was kind of terrifying

but that forced me to realize this was a thing and i should figure it out and that's how i found out

cut wheat out of my diet, shortly started feeling a ton of energy i never previously had, farts become highly uncommon, stomach pain disapeared, migraines ceased, stopped getting a random blister here or there that i confused as a zit/cyst - just feel 100% better

I took a closer look at that cutting board. Cutting boards are ground zero for sandwiches.

I’m guessing it did good service for the couple who raised five kids and lived in this house more than 50 years. While it’s got a lot of scars I don’t see anything which suggests hatchet work.

The cutting board is from Munising in Michigan, a company that apparently went out of business in 1955.

There are holes for small legs but they’re long gone. I guess the bottom pic is how the original version looked. That was on-sale online and called a Munising Butcher Block.

Yeah that’s kind of a contentious issue with me and the wife. I think my mother-in-law was visiting and they made like a 3 hour trip to TJ Max. They must of just had a container come in with a bunch of Italians goods and she brought that home. I was like WTF are we going to do with a lifetime supply of fig infused balsamic vinegar. Wife was not pleased. I’ve put it to good use though. Balsamic bbq sauce for ribs, marinated chicken you name it, I’m almost done with it.
