Slick move putting the eggs on top of the hash browns. Plates never seem big enough for a real breakfast. Plus, any yolk that drips through gets soaked up by the hash browns.

Why don't restaurants do this??

Wow, those hash browns! Any tips on that? I love good crunchy hash browns (scattered, smothered, covered) but have pretty much failed in my few attempts.

Greasy spoons in my home town in the midwest do, slices of cheese go between hash browns and eggs. For whatever reason Eggs are produced in pairs so if you order 2 you are getting 4. All for 5.95 Cash only.

I forgot all about the soaking in water trick. I just used this electric griddle so I could spread them out in a thin layer. They never seem to come out right when I use a regular frying pan.

i knew some folks wouldn't be fond of the cook on that bacon, but that looks like pretty much perfect for me as long as it doesn't have a burnt flavor. absolutely required like that for a BLT. if i can tap my bacon on the edge of the plate and have it snap we're in the ballpark.

what i'm curious about is the interior shot of those hashbrowns. it's great to have the outside browned like that but if the inside is still a little starchy and somewhat uncooked i might need to reevaluate my previous comment

as for a ho-made breakfast, it's near the top of my charts.

Haha, I was assuming normal potatoes, not pre-cut frozen hashbrowns. No hat required either way.

In that pic the inside was definitely a little mushy still. After that I split the top and bottom with a spatula and flipped them inside out so that there was crispiness everywhere.
