I wouldn't mind people eating nigiris and makis with their hands, just have never seen it. Also I don't want to myself, even though I like finger food in general.
I care very little if that's not approved of by japanese cuisine snobs, and I'm pretty confident most chefs don't really give a **** either.
About 10 years ago, I used to work with a guy who lived in Japan for a while, married a Japanese woman, and taught high school Japanese. IIRC, he told me me that sushi (the rolls) were meant to be eaten with hands.
However, I too mix soy sauce and wasabi and find the chopsticks help the mixing process. I continue to use the chopsticks and go against what he told me for two reasons.

I'm a douche (however not sophisticated). Since my roll is now about half dipped in a soy-wasabi sauce, I prefer to keep my hands clean. Even when I eat a roll dry, I still don't want a bunch of rice sticking to my fingers. I guess I'm making an argument for good sanitary behavior, however that wasn't my intent.
