Yeah, the everything else thread is pretty fantastic too. I think I'm going to start at the beginning of that and work my way through and attempt to recreate some of the masterpieces weekly.

Preview for tomorrow. A whole prime grade 7 rib roast from Costco. Cut into single rib steaks and a 3 rib (loin end) roast for tomorrow. Made an ad hoc rub of Kosher Salt, black pepper, Lawry’s, onion powder, garlic powder, paprika, ancho and chipotle chili powders, and brown sugar. Will smoke tomorrow at very low temp (under 200) to 130 and then finish in a screaming hot oven.

Out of the oven at the right temp but 3 hours early. Hopefully the foil/blanket/cooler treatment my briskets get works with this. Should be fine. Going to blast it in super hot oven when it’s time to eat.
Raw pics are before dry brine for 2 days.

JFC you guys, knocked it out today.

Merry Christmas you guys.

Last weekend my wife came home with a large prime ribeye and strip. It was great but after all that steak my wife and kid didn’t want to do a rib roast this year for Christmas. First time we didn’t do one in probably 5 years. Long story but ended up doing a turducken. It was fine but this thread makes me miss the rib roast.
