Highly dependent on the company for Data Engineer, fwiw. For instance, we dont have data engineers that are different from other software engineers, even tho one can work on a DE specific team. This means you have plenty of upward mobility to become staff, principal, an engineering manager, or lead teams.
But I agree at many companies it's a lot of simple modeling and gluing pipes together. The candidates that have _only_ DE experience tend not to make it far in our interview process.
