thank you Nit for posting your EDO trip report, it played a big part in spouse and i ending up there this past friday night. we both ordered the tasting menu as well and many of the dishes are similar to what you had, but i'm going to post all the pics for comparative purposes.
absolutely love the strip mall ambiance (i'm serious)
no test tubes and no pic, but the amuse bouche was a miniature pitcher of tomato gazpacho as a palette cleanser.
the hamachi tartar with bowfin caviar
paella honeycomb
the order of the next two were flipped from the menu
beef tartare with trout roe and a white asparagus veil, served with house made chips
tigreton (a parfait of mussel sofrito, french fries espuma, cornnuts) - so bizarrely phenominal
tarte flambee with iberico, manchego, caramelized onion, jalapeno oil
basque eggplant tallo with wagyu pastrami and parmesan sauce (there were two on the plate)
supplemental Massachusetts U10 scallop with hedgehog mushrooms, mussel sauce, aji amarillo, truffle-coconut beurre blanc and roasted veg. i could eat ten plates of this and call it a day. these are two pics of the same plate
beef three ways
dry aged ny steak, andalusian sweetbreads, and braised wagyu cheeks wrapped in roasted potato to resemble a bone with marrow.
dessert was strawberry granita with a popcorn mousse and popcorn dust. wonderful.
we each had two gin drinks, not pictured was the monkey 47, this one they call the grey whale.
i would order any food on their menu without hesitation...highly recommend at that price point.
