If you enter Thailand on a visa-exempt basis (you get your visa upon arrival), then you have to have proof of onward travel or else your airline won't give you a boarding pass because Thai immigration/customs won't let you through when you get there.
You should get a double or triple entry tourist visa from a Thai consulate in your home country. I don't know what it's like in Australia, but in the States I had to contact 6 different embassies/consulates in different states until I finally found one (Portland Consulate) who would issue me a double entry tourist visa without proof of onward travel. Email or call every consulate in Australia and see what they say about that. Officially it's a requirement to get the tourist visa beforehand, but some offices don't actually enforce it, like Portland. If you can't find one that will do it for you, get a cheap flight with Air Asia to show them. They're actually not THAT cheap, like $75 for a one way onward flight to Malaysia when I checked last month.
Just make sure that you try and get your visa beforehand because if you don't know how long you're staying, then that 30 days will go by pretty quick and you'll have to leave the country to renew your visa. If you get a double entry tourist visa before you come, each entry is 60 days and you can extend each entry for an additional 30 days, giving you effectively 6 months before you would need to make a visa run. Each entry was $40 in the States.
