Poured myself a wee dram of The Balvenie 15 Single Barrel. It's very good. Interestingly enough I didn't care for it much at all the first time I cracked the bottle. This is a common phenomenon, I'll explain why this happens at a later time.

Scotch protip: Pour your dram into a nice snifter (scotch snifter if you have one) and let it breath for 1 minute per year it was in the cask before you taste it or add water to it. Continue nosing it and watch the aroma develop as it interacts with the open air. A good whisky will have subtle changes in it.

This particular single malt is simply aged for 15 years in a single oak cask, no extra finishing in sherry casks or anything.

Nose: Very oaky, honey and vanilla are present, though not as apparent. Oddly enough, this one smells like a good sherry finished whisky to me, though that's not the case. Some fresh floral aromas are present but more in the background.

Palate: Very rich honey flavor. Strong oak accompanied by light vanilla. A sort of mellow spice to it, maybe some cinnamon. Lots of flowery flavors though nothing exact sticks out. A very overall sweet and fresh meadow flavor.

Finish: More honey in the finish, but it's not as sweet, more of a dry, woody honey. More spice in the finish, some clove and nutmeg seem to be present.

Adding a couple drops of water dramatically brings out a sort of (not entirely unpleasant) bitter flavor that emerges in the middle of the flavor and disappears but comes back like a ghost in the finish. Adding a little more water really helps balance the whisky and the bitterness disappears altogether. A slightly citrus flavor emerges where the bitterness lurked, but it is very much an oaken citrus, as would be expected by a whisky aged this way.

All in all, a quite good speyside single malt whisky

I cry a little when I think about how much good single malt scotch I drank on the rocks. I'd say prob half a dozen bottles or so.



Soulman: I did some research on pairing my scotches with food, but it doesn't seem to be commonplace. I guess scotch is usually saved for having with desert (sometimes) but more as a desert in itself.

But beer is fantastic so ill focus my food pairing in that direction

Yes pairing spirits and food is definitely more challenging (exceptions for dessert). I know it's possible - I have a friend who's a major scotch freak and he went to some sort of course (right word?) to learn how to pair scotch+food. Apparently it's not unpossible, but I have nfc about scotch.

Beer is possible to pair with just about anything given the broad range of beers available, so sticking with that is just fine imo.
