When your first 3 gates warped in and you poked out to the tower, zerg had 60 drones on 3 bases and only 8 lings. From that point on he spent every single larva on roaches and hydras.
I don't think it's possible to beat zerg when it has this advantage (without DTs). It doesn't even matter what your unit composition is when zerg can double your army supply. So I don't think a colossus build would've changed the outcome much.
The ideal timing is probably when his 3rd finishes, at the 8:00 mark. I'd cut probes at like 32, stay on 2 gas and get up 5 gates in time in for warp gate. Of course, you can't really scout to see if he has taken a third until it's too late to execute a specific all-in like this (although you could send in your first zealot to scout).
As played, the best thing you can do is probably attack him ASAP and hope for the best. I do think many zergs fail to realize the power of just getting ~60 drones on 3 bases against toss and then just swarming in an endless wave of units. It's not hard to get away with on a large map like shipyard.
Or, of course, you can take your third super early too.
