I think it's primarily to combat Undying in case it winds up being too powerful.

As far as UB control is concerned, Think Twice is one of the best cards in the deck, but it gets much worse if you cannot flash it back. The loss of flashback on Forbidden Alchemy is also significant. But the real offender is the loss of the use of Snapcaster Mage. That's really going to hurt.
I suspect Grafdigger's Cage will be in a lot of sideboards to combat Snapcaster Mage in Delver, though probably only as a 2 of since you don't want multiples. On the other hand, if Delver remains the most popular deck, I may not have to worry about it that much since they obviously aren't going to board it.
There are potential answers to this. My sideboard is pretty tight atm, but if it turns out to be a big problem I may have to start boarding Steel Sabatoge. Mental Misstep is also good in the format right now, especially against my tougher matchups (Haunted Humans, Delver, and RDW) so that is a possibility (I was running two MB for a while, mostly to combat Doomed Traveler and Stromkirk Noble, but have since removed it).
We'll just have to see how it winds up playing out. I hope you are correct in that it won't be too popular.
