my opponents are always super organized giving me very little passing options and let me work very hard but when they attack oftentimes two simples passes are enough and they are 1vs1 i just dont get it(midfield is overrun super easily)

I like 15-20 pressure and 40-50 agression so far with cover line. I like to use a CM/DM to chase the ball/passing lanes/through ball route instead of controlling a cb and then having the cpu pressure the player with the ball (which I think most people probably do defensively). I think it helps keep shape better and is the best way to defend against 1-2 through balls.
I think denying passes is the most important thing to defense this year, that and not overrunning those in posession when they do a move on you. Try and work more on just keeping the ball in front of you rather then trying to win it at all times. Most players will try and make the pass they want to make even if you have it covered.
But that is just me I have been playing low pressure for awhile now so I am comfortable with that style of defending.
