Villian is 31/18 with an agression factor of 2.75 over a fairly significant sample and a 3-bet of 9.5%. He got his big stack in a pot against some 51/16 by three betting and calling a big 4-bet then getting it in on a AJ8 flop, JJ>AK

That being said I can't remember seeing him get way out of line post flop, obviously he's not good or anywhere near nitty, but it's not like he was calling down incredibly light, I think he cr'ed once previously in the session.

What do we do here, call and reevaluate, fold, or raise?

hmm ive got myself into some tricky spots in situations like these . I dont think calling is an option if we are going to fold to another barrel bet by villain on the turn . For me its either a fold or a raise

A good portion of his range we are racing against (T9, 89, etc) and the rest we are crushed against. The only hand that might do this that you are in good shape against is AT and most likely you be facing a big turn bet no matter what comes. I let this one go.

We are not racing against T9, 89. We have blockers to their outs. I get it in here.

Reviewing the hand later, it seems like calling and reevaluating the turn poses some problems. If we do choose to reevaluate, we still need to be willing to get it in on a lot of turn cards. I think we should assume that if he is bluffing, or is value betting a weaker hand he is betting the turn a lot, so calling with the plan on folding turn if he bets is losing money. If we're still willing to stack off on most turn cards I think getting it in on the flop would be better since there a lot of turn cards that kill our action. Thus, by calling to reevaluate we might still end up losing our stack to better hands, but not make as much profit against hands we beat.

On this board there are just so many better hands he can have that are likely, 78 77 88 TT T8 T7 J9, but you have a GS. vs some of these hands
The only hands he might c/r as a semi bluff is A9 K9. If you get all in vs those hands it's not like your a huge favorite to win around 64%.
It's probably slightly -EV to get AI here, I would fold, 2.75 is not crazy aggro and a c/r at NL50 is usually the nuts.
