All I'll say is that they are plentiful. I'll let variance do the rest.

Restaurants:
Tulsi-Award winning Indian and a personal favourite.
Cava-Spanish restaurant and although I've never eaten here, I've heard great things from anyone who has.
McGinns-Lovely local restaurant overlooking the harbour.
The greyhound track has a restaurant which would be a great shout for a 2p2 dinner but they are terrible at accommodating bigger groups. Worth a night for smaller groups.
Bars
If you stick to Quay St., there's always somewhere lively nearby where you can refill your glass.
A few places that you might not hear about in the tourist guides are
Roisin Dubh: If you're into your slightly alternative music then this is your spot. Lisa Hannigan is playing there for €20 on the Wednesday and there's live music from four different bands for free on Saturday night.
Monroes: More music here but of a more traditionally Irish variety. Great place to see any of the big matches that will be shown that weekend and there's always a crowd.
NUIG College Bar: On the Wednesday night, the bigger university has their Arts Ball and it's an unofficial tradition to get up bright and early on Thursday morning, head to the college bar and do it all again so if you fancy an all day session on Thursday then I'd plan to get here early.
Clubs
While Galway is hardly a clubbing Mecca, they are always full and you'll be too drunk to care where you are at that stage anyway. The main two which you will likely end up in are 'Central Park'(CPs to locals) and 'Halo'.
