Someone needs to lead the band. If you're in a rock band, it's the drummer usually kicking off the band; if you're in an orchestra, it's the conductor that kicks off the orchestra. Also, as you know, when you're on stage it's hard to tell what mix is coming out of the PA speakers. With an orchestra, the conductor is the sound man.
If the viola section is too loud/soft, he signals to them to change their dynamics, and he does this constantly throughout the piece for every section/player - he also controls crescendo/decrescendo, as well as other markings in the music. Also, if you have a 128 measure tacet, you can go to sleep and the conductor will cue you in when you need to play.
Like sound guys, I hate conductors, too.
