The snail industry is bigger than you might think. To give you an idea, our farm employs 20 and we're not even the biggest pups in the industry. There's a lot of people a whole lot bigger than that! I'm always weary of posting figures, but since this is the Internet....$100,000!

My favorite way to eat snails is with a little butter and a little horse. Mix the butter in with horseradish ahead of time. Let sit in the fridge. Make sure the snails are hot before you put them in the wave. Zap them. Quickly put them in a Rubbermaid container with that cold butter and horseradish mixture so it is able to become warm and provide flavor to the snails.

When I first started it was all about the money. Then it became about the taste. Then it became about outputting the best quality taste money can buy. All three played a part in getting where we are today.

I don't know how you'd mispronounce it since most people I know know how to say it. That said, it always gets at me when people say ESCARGOTS instead of ESCARGOT. I know I've done worse.

Snails yes they taste great! The french eat them morning, noon, and night! Also, the french know how to eat! My advice to anybody is just to try them before you say anything about them. That's good advice in general, I suppose.

Ooo I don't know much about slugs, but I know people eat them in Asian countries. I don't think I'd want them myself. And, I know there is no market for it here! That said, I do know several slug slingers who make a decent chunk. It's easier to be a tycoon in the slug sense in that there is MUCH LESS competition. You can pick these things off the road for free. People know snails are valuable so you can't find a decent eating snail in America out in the wild. Cheap labor costs also play a role.
