The red line shows the mathematical winnings whereas the blue line shows the actual winnings.
It's quite simple really: Let's say you're on the turn with top pair. Your opponent has two overcards and no additional draws. You bet $100, he calls. He's about a 14% to hit a winning river card.
So for this bet, your mathematical winnings are $86. If you do actually win, you will run $14 above expectation. If you lose, you will run $86 below expectation.
