Video card/dual monitor confusion?? Video card/dual monitor confusion??

So I know nothing of how to hook up dual monitors except whats it the FAQ and its leaving me a little confused..
All I need is two outputs on the card? But what if say the card has HDMI, Dual link DVI, and VGA connectors, if i hook up either two of the three wont the quality be different at all or no??
Also, I want to buy a new HP desktop, preferably running Two 23" or Two 24" monitors, which graphics card is better;
These are their options:
512MB NVIDIA GeForce G210 [DVI, HDMI, VGA]
512MB ATI Radeon HD 4350 [DVI, HDMI, VGA adapter]
1GB NVIDIA GeForce GT 120 [DVI, HDMI, VGA]
1GB ATI Radeon HD 4650 [DVI, HDMI, VGA]

DVI and HDMI are basically the same, both digital, so they image quality would be same. VGA might suffer a bit, but depending upon your uses that wouldn't be noticable either. But yeah, just use DVI and HDMI.
