I am building my first PC. I will only be using it for poker. I want to be able to run 2x27" (2560x1440) with absolutely no slowdown.

I will likely start with just 1 monitor and add the second one further down the line.

Does it make sense to get 1 card capable of running just 1 27" perfectly and adding the 2nd GPU with the 2nd monitor?

What card/cards would be the best for this use?

you will never need two gpu's for poker. an entry level card $50-100 will be fine. any lag will come from hdd/cpu/ram first (most likely in that order if using hem/pt) not gpu.

Ok so basically ur saying a card less than $100 will drive 2x27" monitors without a sweat? I didn't think the actual poker software would require the power of the gpu.

Awesome to hear, thought it might take something more powerful.

You can buy gpu's that have 2 video outputs so you only need 1 graphics card. Make sure they are the same port as the monitors.
