Because either hes produces to a level in which $30m a year is low and he bails or he produces to a level in which $30m a year is overpaying and he stays for 5 more in his 31-36 years.
When you sign a deal thats this long you're doing it banking on the fact that the future market is one that values their production higher than it does now due to inflation, competition, whatever. By giving him a player option after 5 you never, ever get that opportunity. If the market does value it higher, he leaves. If it doesn't, you're paying for 5 more years.
