1 and 2 are controlled by the pokerstars client's base theme and can not be edited, ever since they encrypted the gx.ini file. The majority of custom themes are built on the Hyper-Simple (Ordinary base) and Stars bases, and have a relatively light colored text. The buttons and seats may be wildly different, but the pot amount box and all the text that gets placed on the custom images, can not be edited. The No Images themes use the Classic (aka Simple) base. These themes have yellow text.
I haven't modified or used the newer bases (Slick and Black) very much, but they might be better for you. The largest selection of custom Table Themes for PokerStars are available at

FWIW - The Full Tilt client still has an editable gx.INI file that allows some of the table text to be bolded.
