one of my fav (and easiest) things to cook is fresh salmon fillet. just score the skin side with a knife, season generously with olive oil and salt, cook it in a hot pan skin side down without touching or moving it. once the meat starts turning pink abt 75-80% of the way up at the sides, turn it over to finish off cooking just a bit and serve with salad etc. my idea of a simple yet delicious and healthy meal.
