Thanks to this thread I now have hearts of palm, nori sheets, and avocados. I'm going to marinate the hearts of palm overnight with the nori and some lime juice and attempt a vegan ceviche tomorrow.

Loosely basing it off of this:

I think I will add red bell peppers, make a spicy guac, and use plantain chips for dipping.

Tortilla doesn't fall apart like a bun does, the ratio of bread:meat is far better, and its easier and less messy to hold.

Worst case scenario? You have to eat a second brat on a bun. I see no downside

Agree its way better than regular yellow. I unfortunately was out, but if you look closely at the pic you'll see I compensated by also slapping some green Cholula on it.

I would try this with kombu instead of nori (if you can get both). Kombu is the preferred seaweed for extracting flavor; you would want to do something similar to making dashi. It is cheaper (per ounce) than nori.

No idea how nori will work in a marinade, so I’m curious to hear about the results. Cool idea!

I saw both stone ground mustard and spicy brown mustard Great Value Bottles at the Wal Mart the other day. I ended up buying Gulden’s spicy brown because it was cheaper somehow...that surprised me.

I also saw these bratwurst and cheddar burger style patties. Would have tried them but there were like 8 in the package and I’m not trying to live that 8 cheddar bratwurst burger patty life right now. Anyone ever try these things? Any good?

Ok I had to google this and it sounds like it's a coarse version of dijon. Definitely not what I had in my head! Sounds pretty good actually!

Haha I retract my previous comment, the real crime would have been just throwing them in the rubbish.

I have definitely been persuaded to try the brat/tortilla combo, will report back.

I only prefer tortilla over bun for sausage if there is cheese involved. No cheese and it is definitely bun for me.

No ceviche today as I discovered last night that my two brand new avocadoes are gross. Will probably make a Chipotle run in the next few days and buy some guac. I am determined to make this work.

Was in Bodega Bay over the weekend so naturally I thought of... sandwiches!

Checked out a little market and grabbed some local cheese


And a few house-made brats and a couple lamb sausages


Obviously wrapped them in a tortilla#1 with peppers, onions, and spicy brown. Crab cake peeking out for good measure

^ Oh hot damn that does look good. I consider myself a traditionalist but that cheese, those brats and those awesome looking tortillas have be rethinking everything.

I still think I’m a brat and kraut on a bun guy but would happily give that a spin.
