OK, I got some Korean "ramen" packets from CostCo. (Not fried, so not really ramen, I guess) As is, they are really good, just boil the noodles, strain, and mix with the sauce packet. Simple, but pretty tasty, as is (also 2/3 RDA sodium, mmmm).

I'd like to incorporate a couple eggs in, but I'm unsure how to proceed. The instructions are simple: bring water to boil, add ramen, boil for 2 minutes, strain and mix w/sauce. Do I add the eggs whole or beaten? Before the noodles, with the noodles, or like with 1 min left, more or less?

I'd probably add some hot sauce (Cholulu preferred).

First off, I don't strain. Sometimes I'll pour a bit of broth off, but most of the time I just dump the whole thing in a big bowl. Didn't your mom teach you that broth is good for ya?

Second, yeah man just plop the eggs right into the pot. It's easier than you think.

- Put water on to boil (medium)
- Toss in your veggies. I usually throw in some diced onions, celery or carrots, greens, and a bit of garlic.
- Once it starts roiling, put your noodles in. Stir them for a minute or two so they're soft and pliable.
- Crack eggs and plop them into the pot, look at the clock. Let them cook for about 2 minutes.
- During this 2 minutes, prep your bowl. Either put your sauce packet in the bowl or other seasonings (I use rice vinegar, soy sauce, and a small drop of liquid smoke).
- Take the pot off the stove. Strain out whatever amount of broth can't fit in the bowl, then pour it all in.
- Let sit for a couple minutes before consuming.

Made my own variation of Yaka Mein but no boiled/pickled eggs. Sautéed some green onion and baby bok choy I sesame oil. Added some soy sauce, Thai sambal oelek hot sauce, Crystal hot sauce and fish sauce. Added hot water and dry chow mein noodles. Added some brisket my friend cooked up over the weekend. Took off heat and cracked some eggs into the pot at the end. Don’t stir.

well I made the Kenji carbonara - the sauce came out good - no scrambling of the eggs, but I think the reason I haven't made it in a while is it's not really anything special. I should say Kenji used guanchala (pork jowls) and I used bacon although I used pancetta before. Maybe that makes a big difference, because the taste is just egg sauce over noodles to me.
