I'll be doing something very similar Sunday morning. Not sure if I'll have the bacon+sausage on the side, but maybe one or the other (plenty of sausage in my gravy already)

Belly's rumbling already, just thinking about it.

Anywhoooo, since I can't leave well enough alone I added bacon, mushrooms and jalapeno. Only minor critiques... 1) I added salt when I whisked the eggs but after adding the potato mixture in I should have added a few pinches more. 2) Not browned evenly on both sides.

Was going to eat half warm and save the other half to eat later at room temperature. That obviously didn't happen because IT WAS AWESOME!!!

it has a great shape and it looks like you got the interior cook just right.
i haven't had one since the last time i was in Spain but i think that's going to have to change soon. tortilla de patatas is a very common tapa/pincho, especially in the north.

Best analogy I can come up with is quich is more like cornbread. Drier send more fluffy. This is more like a pancake. Nice crust on the outside but more dense as the eggs in the middle are just set.

I've been watching a lot of Kenji videos during lockdown - he's cranking them out. The Spanish Omlette looks good, but I'm going to try his Carbonara (made with bacon) first.

Made an avocado on toast with an egg today and it was A+. Iggy's sourdough toasted, avocado/lime/red onion/evoo/s&p, over easy egg on top(no brown at all f that s):



Simple and perfect.
