I'm going to have the girls at our party make the velveeta/sausage spread PChippa linked to earlier, but instead of dipping with chips I plan to spoon some of the mixture into warm tortillas. Will report back with the results.

Stirring in 1 cup of milk after the cheese melts has been confirmed at least 3 times by my own experience as a good thing to do if you want the dip not to seize up too much it cools.

first batch came out great and was a huge hit.

second batch:


oh well. that was the last of the sausage but I have tons more bacon and dough, so will get some of those going during halftime.

I'd like to come up with a dipping sauce that's more viscous and doesn't drip as much as maple syrup. I tries whisking together maple syrup, flour, and butter but it didn't turn out too well.

might try some kind of guar gum or something.

Getting the Berkshire pork for twice the price was well worth it. It's darker, fattier, and is packed with a lot more flavor than the stuff you get at costco.

I did the real pigs in a blanket and they came out great. I would like to mention that I also offered honey mustard dipping sauce in addition to maple syrup, and the honey mustard was a monster success.

Also recommended, sausage, wrapping in bacon, wrapped in the croissant. Thinking of trying that next time.

I will be making P Chippa's blanket snacks again, hopefully won't burn half the sausage ones this year. I still think there could be a better sauce for dipping though, something with the maple syrup in it, but thicker and not as sticky. I don't have any real ideas though.

Frank's hot sauce is awesome; I'm going to grill up a big batch of wings with it. Also probably going to smoke some pork and/or beef ribs and grill some sausage. RIP quids.

Bought wings, nachos, and hot dogs today. gonna make the GOAT sriracha wings again this year with jalapeno ranch. grill some dogs. nachos with fresh jalapenos, beef chili, and queso. friend is bringing some pigs in a blanket, another some potato skins.

TN legalized moonshine a while ago, and a great place opened up in gatlinburg nearby; I'm serving a jar of white lightning and a jar of apple pie 'shine.

Making 4 or 5 racks of baby backs.

What do people think about wrapping them in foil while cooking while cooking on the grill? I always do so to keep them from the direct heat of the grill (it's not large enough of a grill to have them far enough away from the heat to properly smoke on low heat) but I always wonder if all that foil is robbing them of getting the proper smokiness. Last year I poked some holes in the foil but I'm not sure how much that actually helped.

- home made beef jerky (again)

- bacon/sausagemeat/cheese roll

- pigs in blankets with a maple-mustard glaze.

Brewdog beer, and some different IPAs from US/UK.

Think my friend was eyeing up the food stadia and tempted to try making. He's invited non football fans over from 9.30pm (kick off here 11ish) for video games, so I got a buddy to pick up a copy of Madden so they don't hijack the evening playing f***ing Mario Kart or something.

And I have Monday off work to recover.

EDIT: 2013 I think i'll make the burger/bacon tortoises from the Move Over Chippa thread, they look awesome.
