Pretty much have to get them online. That is indeed the recipe I use. Any sharp cheddar works great but we like Tillamook the most.

I put the pork belly in the sous vide cooler, I wanted to package it with some tasty things but my sealer isn't big enough for decent sized portions of it so I just used the packaging it came in and I'll add flavor to it after it's done. Doing 155 for a day or so then I'm going to put it in a 300 degree oven for a few hours to render the fat and get it crispy. Then I think I'll deep fry chunks the day of.

this is major cheating, but my go to game watching food recently has been buying smoked wings from wherever ( whole foods, local bbq joint etc) and then frying them at home, covering in favorite sauce ( just buffalo for me). They are amazing, fall off the bone, smoky, yet crisp, and so so easy.

I've gone to the local BBQ spot and ordered wings without any sauce many times.

I prefer my sauce more than a premade or restaurant's.

I cheat with guacamole by instead of buying fresh tomatoes, onions etc. and spending the time to dice those all up, I just get good chunky salsa (only idiots don't get their salsa from the refrigerated section). Mash up the avocados, mix in the salsa, and people devour it.

Avocado red onion lime juice garlic cumin salt black pepper roasted jalapeños and if you feel like it, cilantro

The last six ingredients are best mashed together in a mortar before mixing.

I'm going with

- Fajitas for a main course

- guacamole
- fresh salsa/Pico
- vegan pesto stuffed mushrooms
- vegan zucchini tater tots


Hosting about 2 people... Gonna have to work my ass off lol. Have a couple vegan friends (lol them) so needed to have something vegan going

Going to a small get together

Firing up my smoker tomorrow to smoke about 30 ABTs (bacon wrapped jalapeño poppers that have cream cheese and a little Smokie inside)

Also put some dry rub on about 5 pounds of wings that I will smoke at my house and then finish at the party on the grill...got a real spicy dry rub on the wings as I know it can't be that hot right
