Almost drove to Famous Daves and picked up some brisket but I ended up getting too trashed. All I've got is rabbit food here and even $15/lb brisket (cost at FDs takeout section) sounds pretty damn good right about now. Oh the humanity imo. Hell that bacon is making me hungry.

El Creel just finally pulled the brisket off the smoker about 10 minutes ago. Elapsed smoking time: 17 hrs, 10 minutes.

We have not yet tested the brisket. It has to rest half an hour for the juices to congeal or something. I dunno. I'm not going to bed without a juicy brisket sandwich. Emergency rations of white bread, pickles, onions, and home made sauce are on standy. Beer supplies are low.

Update: The brisket was ******g amazing. There are two sections of the brisket, the fatty side and the lean side. The lean side was very good, but the fatty side was literally some of the best (if not the very best) fatty brisket I have ever had. We smoked the hell out of that bastard, and there was a great flavor to it. Epic success, other than us totally failing to account for the amount of time.

not the greatest pic but I was super drunk and tired. Check out the dark red smoke ring on the edge of the meat.

I still have like 5 pounds of beef in the fridge. At the end of the night when we finally ate, there were only about 6 or 7 people standing of the 12-13 who came over. I also made some ranchero pinto beans which were even better than the brisket. (Ok, not really, because the brisket is meat.) But they were seriously amazing beans, and we ate the whole pot.

Some of the bean ingredients before cooking:



For the beans, I cooked about 3-4 cups of dried pintos until near tender. Then I fried up an entire pound of bacon (see pic earlier in thread.) I diced up two yellow onions, two ripe tomatos, a bell pepper, and 3 jalapenos. I kept all the bacon grease and sauteed all the vegetables in it with cumin, chili powder, and pepper. I also threw in a few tablespoons of the brisket dry rub (Tony Chachere's & cracked pepper) into the beans pot, and then simmered for about two hours with the chopped up bacon.

I drank about 15 beers



ate brisket, passed out at 2am, and didn't get up until 1pm today.

In a little while I am going to get some more brisket. mmmmmm brisket.

I would have taken it out at 150 degrees. The FDA approved food temps. are grossly exaggerated....but I like my stuff pretty rare.

Sure looks good though!
