Is it an area normally supported by an office lunch crowd? Makes a ton of sense if so - near my pre-Covid office there were an absolute ton of restaurants that seemingly made all their revenue between 11 and 2 from the dozens of offices packed within 4 or 5 square blocks. Now I'm sure most of them are struggling (the Chipotle still opens at 11AM per Google, though.)
4-10 hours means you can run the store on one shift - 1 hour prep, 6 hours open, 1 hour closing. You can trim a lot of labor that way.
