Besides that, a carb can be one of many things that is made in the form of C6H12O6. Sugar and simple carbs are easy for the body to absorb. Complex carbs like starches are a little harder to break down and trickle in over time. Fiber is often made up of carbs we don't have the ability to break down and absorb so they pass right through.
Do you know why beans make you fart? Because they have sugars (carbs) that are too too big to absorb and instead are eaten by the microbes in our gut, producing methane, making you cut those muffins. Taking a supplement like Beano, which contain those necessary enzymes, allows those sugars to be absorbed.
So 50g of simple carbs will cause a very different insulin response than 50g of complex ones or 50g of fiber.
