My 'signature scramble' is a spinach-mushroom-bacon-feta combination. Still tweaking.

No, what I mean is that other people's preferences are wrong, because I said so. GOSH.

When I cook eggs at home it's typically scrambled, with cheese and various seasonings, cooked low and slow and left pretty wet. Add the cheese halfway through, enjoy.

Something else you might try is to just cook the first side as usual, then pour a small bit of water in the pan and cover with a lid for about 20 to 30 seconds which steam cooks the tops and you don't even have to flip the eggs.

I looked it up yesterday and it refers to the doneness of the yolk. Probably shouldn't admit this but I had assumed it was more about degree of difficulty because I can't turn an egg worth a damn.

Please make youtube videos of what you imagined the difference between over-easy and over-hard looked like?

I can't flip an egg for **** either. I've decided that it must simply be that I have ****ty spatulas or something, as there's no good reason why otherwise that doesn't reflect really badly on myself.

Use lots of oil and 2 spatulas if necessary!

Ok. This is actually a serious question because I genuinely think Americans might not use this stuff.

Do you have olive oil in the US?

Wow, so little love for sunny side up. Probably because no one ever taught you how to properly fry an egg. Use medium heat, an 8" skillet, butter, and cover for 2'30". Then put them on the plate.

Ask an executive chef how often someone comes in from culinary school or another restaurant and can't cook eggs. If people who went to school **** it up, the average Joe or diner cook is in bad shape.

Tbf going to University and meeting people who don't know how to use a washing machine makes it far easier to believe.

Cook in a non stick pan with some butter or oil.

Over in all three means flip over half way through cooking.

Over easy = runny yolk and slightly runny white near the yolk.

Over medium = runny yolk and fully cooked white.

Over hard = hard yolk and fully cooked white.

If you are cooking at low temp use butter because you can! If you are cooking at high temp use something like sesame oil. The middle ground where you can use olive oil isn't a temp you should be cooking eggs at.

Olive Oil is not for eggs. As said earlier, butter, bacon fat or you just having **** for breakfast so why are we talking about eggs?

I bet you couldn't tell the difference between an egg cooked in olive oil and an egg cooked in butter. The only difference is that you don't get as fat. Little lessons for you all. Extra virgin ftw.
