I once had an order of "three pepper wings" that featured a "sauce" that was fresh versions of those three peppers ground into a puree and poured over the wings. I love hot foods, but that was truly ridiculous.

As soon as I took the first bite, sweat popped out of my forehead. Even though I was careful to use the back of my hand to wipe my forehead, and even though I'd only picked up the first wing for a few seconds, it was too late. The oils had made it to the back of my hand, and when I wiped my forehead, I burned a streak onto it.

It took me two hours, four pints of beer, and a side order of mashed potatoes to be able to finish those wings. By far the most egregiously hot food I've ever eaten.

Yeh gotta be careful. I've learnt from experience to never try to pour from their bottles.
Many a ramen/soup has gone down the toilet to learn that, or me soldiering on (because I didn't want to waste 14p noodles) and being in the fetal position for 4 hours. Not fun.

If you get it right they are brilliant though, good heat and flavour, and if you're into experimenting with making hot sauces these are perfect.

Actually, I do. My fave wings are made with smoked carolina reapers and scotch bonnets in the sauce. This was not a sauce, though. It was just a paste of doom.

How long do they last? I like the idea, but can't imagine using up all three bottles unless I was making hot sauce for christmas presents, or some such.

They last ages. I used to get the big bottles (500ml) of the Reaper one, but I can't find them any more (these are 200ml).

Not sure how long it'd last, but I've had some, open, close to a year that's been fine without refrigerating. Salt + acid + capsaicin aren't friends with microbes. Worse comes to worse it ferments and you've got yourself some spicy sriracha.

Bumpity bump.
Inspired by the coconut based sauce in the egg thread, I decided to try my own as I love coconut. Pretty much winged it and have been happy with the result but needs some refining.

Blended the ingredients then simmered for about 30min. In no particular order:
1 large shallot
1 carrot
1/2 mango
1 banana
1 tin coconut milk
1-2 cup apple cider vinegar
Few spoons of ginger/garlic paste
Spoon mustard powder
Rehydrated chilies - 2x Carolina Reapers, 2x Trinidad Scorpions, 1x Habanero

Boring photo, and about the time I realised I have nothing to put it in to.

I've become addicted to this sauce. Its I guess about medium-hot, but I could drink it with a straw. The flavor is very jam-packed with fruit & acid, very tomatillo forward and I've gone through like 3 bottles when I have way older bottles that are still 75% full.
