nice crust for a flank steak. i always find it very hard to get a crust on them -- what did you do?

Grill on super high... Well as high as I could get it while it was 30 degrees out. 500ish.

Marinating in soy sauce and sugar probably aided that as well.

another ny strip, this time from whole foods, supposedly aged:



peppercorns!



after initial sear in oil



browning some butter



after being basted in brown butter and before being finished in oven:



shallots, garlic, more pepper (green and black) for the sauce:



brandy peppercorn sauce finished:


out of oven and after a 10 min. rest:



overshot it again but not by much.

pretty good. last one was better, probably because it was prime. the alleged aging wasn't noticeable here. B+

I'm not sure if this thread is worth reading so I'm hoping someone could answer this super important question:

Are they any OOTers who believe that well-done is a respectable way to eat a steak? And if so, were they overwhelmingly humiliated by the ensuing argument?

Staying at a friend's place this weekend and decided to cook steaks for everyone. Literally the only pan in the house is a crappy old non-stick pan but the good ole reverse sear method saves the day. Steaks were 300 day grain fed ribeyes from the same butcher as my last post. Have more pics but it was difficult enough getting just the one on here from my ipad, might post some more later.



Also while we were in the store they were cutting up a 9+ wagyu tomahawk steak. Each was about 3kg (6.6lb) and were selling for $300 - they were a thing of flinstonian beauty:

My dad will only eat well done steak. He is the grill master at his house, no exceptions so I always stick to the pork or chicken.

My little sister and brother (both in 20s) love well done steak with ketchup. It's like they're still 5. It makes me sad.

One of the things I like about barbecue is it's kinda like a well done steak.

What the **** man... I am gonna go curl up into a ball and cry.




On a more positive note my mother who is 65 years old has finally started eating steak medium after spending her entire life runing steak as well done. My face when she finally caved in and tried it was priceless.
