I made the best steak I’ve ever made.

The eye tasted like cap and the cap tasted like heaven. The salt was perfect, the cook was perfect, but mainly the beef was perfect. I’m having a hard time processing just how good it was. Bit of char to cut the fat. **** me that was delicious.

Excellent Hoag, looks like it deserved a nice accompanying bottle.

T-bone tonight. Salt and pepper. Cast iron two minutes on each side. 425 oven for three minutes. Perfectly medium rare and delicious.

Man, I failed. I told myself I needed pics but didn’t take any. The color was no match to Hoagie’s, though.

Next time, I’ll post pics.

Apologies if it has already been mentioned somewhere in this thread but is anyone a fan of Guga Foods? His channel on YouTube is great! Always testing out new techniques for marinading, aging, and cooking all sorts of steaks.

If you haven’t checked it out, you really should. Or don’t. I’m not the boss of you.

He does some really cool stuff. I don’t like his commentary and find him a little annoying, but the actual cooking and testing is worth watching.

alton brown is the nuts when it comes to cooking shows for me, he kinda has as an "adam ruins everything vibe" that is a bit annoying but i really like how he explains the science behind it

normally i read "slowly stir in flour as you whisk" and i'll just be like "nah" and dump it all in there and whisk it thinking there's no difference but he'll address why doing stuff like at has actual consequences and matters

Oh cool I've had that one actually, great source obviously, the Carter from that Vineyard is a top 5 for me.

I find him more tolerable as time goes on but binge watching his videos is difficult. It’s alright in 1-2 video chunks.

The science side of him is cool but I’ve heard that he genuinely is a judgmental a-hole in real life and his jerk attitude is legit who he is. I thought he just did it for the show but a lot of people have complained about him. He’s just not a nice guy.

I've been watching Alton's weekly QQ show and he rarely follows all of the hyper specific technique which is refreshing. Sometimes he'll acknowledge that he's doing it wrong and is like, "**** it."

Hoagie, that steak was awesome and it looks like you got the very end of the primal where the cap is largest and the eye is actually two muscles. Very nice work.

This, but what celebrity chef is a nice guy? Bourdain made it clear in his books they're all *******s, including himself. Maybe Emeril and Symon are nice?
