That looks good, but most people in this thread would probably stab me with their Shun knives for separating parts of sinew and fat from edible meat. You still have my vote for the other posts, imo.

Bigdaddy has the one I'd want to eat the most. The super thin chars from the sous vides just isn't as fun.

It's a contender for me, but the main reason is the aging. His cooking, namely the interior, looks definitely worse than many steaks here (despite still being great in an absolute sense). I was going more for execution than on the cut of meat, even if being attracted to the cut is unavoidable.

wish i had some pics of the last filets i did, after the worst steak ever from the palm, i avoided filet for years. gf got some and i changed my mind back. probably not quite the caliber of some here but for a $20 pan they usually come out quite well. ill snap some next time for the lulz

I love filets.

Avoid this garbage, it is probably available in different packaging nationwide. Sometimes it is just 2 pieces of tough meat glued together.

im not sure if the best part is the plastic pin inserted or the cooking instructions to aim for straight well done

but yes im back to being a filet fan. usually go ribeye > strip but tbone/porters come around here for good prices often also so i get some of everything. a local store here butchers in house, will run ~5.99/lb tbone/PH specials sitting next to the $9 strip and $12 filet. quality is surprisingly good for the prices

I’m traveling so didn’t do a submittal although it would’ve of been pointless.

I’d go with BDV really best overall effort and results even if in the pics it looks overcooked. Bourbon aged steak, huge cut, slow cooked then finished in the pizza oven.

Interior looks slightly overcooked but if you consider what he cooked and the process I think it had a better interior texture than a SV steak.
