Left San Sebastián with food poisoning 7 hour train back to Madrid puking and sh*tting. Not fun. Wife was fine. We only at one thing different the last day, a tuna tartare. Who knows if that was to blame. Mostly over it now for flight home thankfully.

Have you tried freezing your sweet potatoes before baking Ser? It supposedly removes a lot of their water content, giving them a super concentrated flavour.
